The results of testing vegetable snacks developed using a new technology lactulose to add crunchiness the product, without use oil, are presented. biotesting product were compared with potato chips prepared according traditional oil. Biotesting was carried out Daphnia magna Straus test object at age 6-24 hours. duration experiment 96 hours and in each sample three variations different dilution ratios 1:10, 1:100, 1:1000. Based on results, for analyzed given dilution, including control one, arithmetic mean surviving organisms calculated. used technique is based determination daphnia mortality under influence substances present studied water extract. As result studies, it found that solutions aqueous extract from beets carrots, preparation which citric acid used, percentage death samples 1:10 33.3% 26.6 % respectively.
